Nepali Rice Pudding from the Nourishing Newborn Mothers Cookbook

Rice pudding serves as a soothing aid for digestion, provides an instant energy boost, and promotes blood circulation, making it a popular postpartum food in cultures around the world. This version, shared by Julia Jones in her Nourishing Newborn Mothers cookbook, is inspired by a Nepalese recipe she was taught during her studies. Its gentle and nourishing properties make it a perfect choice to be enjoyed throughout the day during those precious first few days after giving birth.

Ingredients:

6 cups water
1 cup basmati rice
1⁄4 cup jaggery
1⁄4 cup ghee
2 teaspoon ginger powder
2/3 teaspoon cinnamon
pinch nutmeg
1⁄2 teaspoon ground black pepper 1 cup milk

Method:

Bring water and rice to a boil in large pot. It will be feel like a large water to rice ratio to begin with, but have faith - it will all absorb. Simmer, stirring occasionally until it begins to thicken. This should take about 20 minutes.

Add the sugar, spices and ghee along with an extra cup of water if your pudding is too thick.

Continue to cook slowly, stirring as needed. When gelatinous in consistency add milk. Cook for a few more minutes to thicken.

Serve hot, with sugar and ghee to taste. Enjoy as desired throughout the day.

Alternatively, serve with a dollop of natural yoghurt and the fruit compote from Life After Birth for a full blown feast that will warm your belly and soften your stools.
